Thai Food Recipe: Gaeng Liang (Mixed Vegetable Soup)
Gaeng Liang (Mixed Vegetable Soup)
Gather:
1 cup shrimp or chicken
1 cup guard (cut 12-15 pieces)
1/2 cup pumpkin (cut 10
-12 pieces)
1/2 cup baby corn (cu
t diagonally)
1 cup green vegetable
1/4 cup sweet basil
4 cup stock soup
2 tbsp. fish sauce
6 red chili peppers
(crushed lightly)
Prepare paste:
2 red chili peppers (throw away the seed)
2 galingales
5 medium size red onions
12 white peppers
1 tbsp. roasted shrimp paste
2 tbsp. dried shrimp
Cooking Instruction:
1. Ground the paste ingredients altogether and finely.
2. Boil stock soup and add the paste from number 1. When it is boiling, add fish sauce,
pumpkin, corn, and guard then cook for 5 minutes.
3. Add shrimp, green vegetable and cook for another 2 minutes. Turn off the fire and then put sweet basil.
4. Serve when it’s hot with jasmine rice.

Tom Yum Gai ( Tom Yum Chicken Soup)
Prepare:
1/2 pound chicken breast
1 cup straw mushrooms
1 cup water
1 lemon grass (cut 2 inches)
4-6 kaffir lime leaves
3 small red onions cut into quarters
2 medium to large tomato
2 pieces galangal
2 tbsp. fish sauce
4 tbsp. fresh lemon juice
1/4 tsp. sugar (optional)
2-8 red and/or green chili peppers
1 tbsp. tom yum soup paste
1/2 cup celery (cut 1 inch)
1/4 cup coriander (cut 1 inch)
Cooking Instructions
1. Boil 1 cup of water. In boiling water, put peppers, galangal, lemongrass and salt.
2. Put chicken in boiling water and cook for 10 minutes.
3. Add mushroom chili paste and cook it for 5 minutes. Then, put tomato, onion, fish sauce and boil for another 2 minutes. Turn off the fire.
4. Put chinese celery, kaffir lime leaves and coriander.
For presentation you can garnish with coriander and red chili pepper. Thai people usually eat this with a bowl of rice. They take a spoonful of soup and mix it with their rice or a spoon of rice and dip it into their TOM YUM soup. There are many kinds of Tom Yum Soup - just exchange shrimp, squid, or even pork for the chicken. Enjoy, this is one of Thailand’s favorite dishes.

Thai Food Curry: Gang Ped Gai Sai Sator (Chicken Curry with Green Bean)
Prepare:
1 cup chicken
1 cup sato (from nitta tree)
1/2 cup sliced bamboo
4 kaffir lime leaves
2 lemongrass (sliced)
2 pieces galangal (cut finely)
2 red onions
1 clove garlic
2 tsp. shrimp paste
1 tsp. kiffir lime skin (sliced)
5 dried red chili peppers
8 oz. coconut milk
2 tbsp. fish sauce
1 tsp. sugar
1 tbsp. olive oil
Cooking Instruction:
1. Ground lemongrass, galangal, red onions, garlic, shrimp paste, kiffir lime skin and dried red chili peppers together. Good thing about making the paste by yourself is the best smell of fresh ingredients.
2. Heat the pan and put olive oil. Wait until the pan is hot then put the paste that we made from step 1.
3. Fry the paste until it smells nice. Now, add chicken, fish sauce, sugar and half of coconut milk. Then mix well.
4. Cook for 10 minutes. Keep adding coconut milk or water when the pan is getting too dry.
5. After that, add sato and bamboo. Pour the rest of coconut milk. Cook for about 2 minutes.
6. Turn off the fire. Dress the curry with kaffir lime leaves.
You should crack the bean open to check inside if there is any warm in it. Even though I picked the most expensive one, which is usually fresh, I still found 5 warms. Be careful naka! ![]()

(Stir-Fried Shrimp with Tamarind Sauce)
Goong Pad
Prepare:
1 cup shrimp (peeled, de-veined and cooked)
1 tsp. minced garlic
1 tbsp. palm sugar
2 tbsp. fish sauce
1 tbsp. tamarind juice (non-dried ripe tamarind+ hot water)
2 tbsp. fried sliced red onion
¼ cup soup stock
1 chili pepper (cut diagonally)
¼ cup coriander leaves
2 tbsp. oil
Cooking Instruction:
- Put oil in the hot pan. Throw garlic and stir until it turn a little yellow.
- Add sugar, fish sauce, tamarind juice and stock.
- Put shrimp and turn off the fire.
Put it on the plate and dress with fried sliced red onion, peppers and coriander leaves.
