Gang Gai Sai No Mai
(Bamboo and Chicken Soup)


Prepare:

1 cup chicken wings
1 cup bamboo shoot
5 shitake mushroom
4 tbsp. soybean sauce
1½ cup soup stock
½ cup day lily flower


Cooking Instructions:

  1. Clean the chicken wings.
  1. Cut bamboo shoot and cook in boiling water for 15 minutes. Drain and leave in a bowl.

Boil the soup stock and put chicken wings, bamboo, shitake mushroom, soybean sauce and day lily flower. Then, boil for 30 minutes with low heat.

Prepare:

3 groups lemongrass (sliced thinly)
1 cup minced pork (cooked)
4 big shrimp (peeled, de-veined and cooked)
1 tbsp. fish sauce
2 tbsp. lemon juice
1 tsp. sugar
3 tbsp. sliced chili peppers (or as much as you like)
4 red onions (sliced)
1 scallion (sliced)
½ cup cashew nuts

Cooking Instructions:

1. Put lemongrass, minced pork and shrimp in one big bowl.

2. Add fish sauce, lemon juice, sugar and peppers. Mix it and then put red onion, scallion. Mix them altogether.

3. Put on a dish and dress with cashew nuts.

4. You may put sliced cabbage at the bottom of the dish or dress with mints will also taste perfect!

Prepare:

2 pieces of snapper meat (70g each)
1 tbsp. sliced chili peppers
2 tbsp. minced garlic
3 tbsp. sliced lemongrass
1 tbsp. kaffir lime leaves (cut finely)
1 tbsp. coriander root (cut finely)
1 tsp. black pepper
1 cup mint
¼ tsp. salt
½ tsp. sugar
2 tbsp. fish sauce
3 tbsp. lemon juice

Cooking Instructions:

  1. Clean the fish and dry it with paper towel. Ground black pepper, coriander root and salt together and mix it with the fish.
  1. Leave the fish in refrigerator for 30 minutes. Then steam with high heat for 15 minutes.
  1. Mix fish sauce, lemon juice, sugar, lemongrass, chili peppers, garlic and kaffir lime leaves together. Add more lemon juice if u like it more sour.

Put the sauce on top of steamed fish and dress with mint.

Kai Yad Sai
(Vegetable Stuffed omelette)

 

Prepare:

1 cup minced pork or beef
½ onion (cut finely)
1 tomato
½ cup cooked sweet corn seed
¼ cup string bean (sliced)
¼ cup carrot
¼ cup cucumber
2 eggs (beat)
1 tbsp. fish sauce
2 tbsp. oyster sauce
1 tbsp. soy sauce
1 tbsp. minced garlic
2 tbsp. olive oil

Cooking Instructions:

1. Fry garlic in a hot pan with 1 tbsp. olive oil until it smells nice.

2. Add pork and cook for 10 minutes. While you cook, add fish sauce, soy sauce and oyster sauce. Mix it together.

3. Put all vegetable and stir for 2 minutes. When u finish, put the stuff in a bowl.

4. Next, beat 2 eggs and fry it on the pan.

5. Add mixed vegetable in the middle of the omelet and fold.
