Kao Niew Piak Sai Phuek
(Black Sticky Rice with Coconut Milk and Taro)
Prepare:
3 cups black sticky rice (uncooked)
3 cups taro cut to dice shape
1 cup sugar
1 cup palm sugar
2 cups coconut milk
2 tsp. salt
5 pandanus leaves (cut short)
5 cups water
1 cup limestone water
Cooking Instructions:
1. Soak black sticky rice in hot water for 12 hours.
2. Soak taro in limestone water 10 minutes and rinse well.
3. Next, boil pandanus leaves with 5 cups of water. When it’s boiling, add black sticky rice and cook for 30 minutes on low heat. Keep stirring. Don’t let it burn.
4. When the rice is very soft remove the leaves.
5. After that, add taro, sugar, palm sugar. Mix well and remove from the stove.
6. Then, boil coconut milk. Add salt and let it boiling. Don’t forget to keep stirring.
Remove from the stove when it’s boiled. Pour it on top of black sticky rice when you serve.

Prepare:
20 Eggs from duck
1 cup salt
2 cups clean water
1 big jar
1 big bowl
Cooking Instructions:
1. Dissolve salt into the clean water and boil it.
2. When salt water is boiling, remove from the stove and leave it cool off.
3. Pour cool salt water into a big jar.
4. Clean the eggs from duck very well. Crack them in a big bowl. Then only take red yolk. Be careful, don’t break the red part.
5. Put red yolk into a jar of cool salt water. Seal it well.
6. Leave the yolk in there for 4-5 days. If you want it to get very salty leave them in a jar for 7 days.
7. After that remove from the jar and leave them in the sun. This way, we can keep for our next next meal
Ah!! I have left so much white clear part!! Never mine, let’s use that on my face.. smell bad but it help my face look nicer! haha

Prepare:
10 banana (peeled and cut)
Choose the one that is not too ripe
10 pieces potatoes
10 pieces taro
2 cups rice flour
2 cups wheat flour
1 tsp. salt
3 tbsp. sugar
1 cup shredded coconut
2 tbsp. roasted sesame
2 glasses water
2 cups vegetable oil
2 cups limestone water
Cooking Instructions:
1. Mix 2 type of flour, salt and sugar altogether in a big bowl.
2. Add shredded coconut and sesame.
3. Soak cut banana, potato and taro into the limestone water. This way will help make the banana, taro and potato get not too soft when you fry them.
4. Heat the pan and add vegetable oil.
5. Dip the banana into mixed flour and then deep fried in hot vegetable oil.
6. Wait until it turns gold then remove from the pan. Do the same to potato and taro.
Thai Food Recipe: Southern Style Fish Soup

(Southern Style Soup with Fermented Fish’s Stomach)
Prepare:
1 cup Fermented Fish’s Stomach
1 cup grilled fish (tuna or saba)
1/2 cup potato slice to a dice size
1 cup bamboo
3 pieces kaffir lime leaves
1 tbsp. Shrimp paste
Prepare Paste:
1 handful dried chili pepper
2 tbsp. sliced cumin
2 tbsp. sliced galingale
1 tbsp. minced lemon grass
2 cloves garlic
1 tbsp. kaffir lime skin
1 tbsp. black pepper
2 red onions
Eggplant, long bean, wing bean (as much as you like)
Cooking Instructions:
1. Ground the paste ingredients altogether. If you don’t want to get strong muscle, blender is your choice.
Not that I don’t want to have a strong arm by using a stone mortar and pestle, I’m too lazy. Anything related to exercise, I would say NO.
2. When you have it already blended, remove to a bowl and take 1 big tablespoon for our cooking. Keep the rest in the fridge to cook next time.
3. With that 1 big tablespoon, mix it with shrimp paste. Add little bit of water to make it mix well.
4. Boil Fermented Fish’s Stomach on medium heat, add 1 cup of water. Leave it is boiling for 10 minutes and then put the pot away from the stove.
5. Pour cooked Fermented Fish’s Stomach into the filter, keep the juice and throw away the bad part.
6. Now, boil the juice we have on medium fire again. Add the paste from step 3.
7. Add potato, bamboo, Eggplant cook for 10 minutes then add long bean and wing bean.
8. Next, add grilled fish and quick stir. If the water gets too dry, you can add more but don’t make it too much. Then turn off the fire. Throw kaffir lime leaves on top when you serve the food.
You can have this salty southern style soup with noodle or hot jasmine rice!
It is my favorite southern recipe!
