Thai Food Recipe: Minced Pork Bread
ขนมปังหน้าหมู Khanom Pang Na Moo (Pork Bread)
Prepare:
5 sliced white plain bread (cut into 4 pieces)
1/2 cup minced pork
1 egg
2 tbsp. minced garlic
1 tbsp. coriander roots
1 tbsp. oyster sauce
1 tbsp. fish sauce
1 tsp. sugar
1 tbsp. soy sauce
1 tsp. white pepper
2 tbsp. roughly cut coriander leaves
2 cups vegetable oil
Side Salad:
4 tbsp. sliced cucumber
2 tbsp. sliced red onion
1 tbsp. sliced chili pepper
2 tbsp. sugar
1 tbsp. vinegar
2-3 tbsp. hot water
Cooking Instructions:
1. Ground garlic, coriander root, white pepper together.
2. In a bowl, mix pork, oyster sauce, soy sauce, fish sauce, sugar and the mix from step 1. Beat the egg and mix it well in a bowl. After that add coriander leaves.
3. Spread the pork on top of plain bread pieces.
4. Now, heat the pan and add vegetable oil. Use medium heat. Wait until it’s hot.
5. When the pan is hot, fry the bread. Sink the pork side into the hot oil first. On low heat, cook that side until it has golden yellow color.
6. Flip the other side and cook until it has tasty color.
7. After that, remove from the pan and lay them on paper towels.
8. Mix side salad ingredients altogether. Stir until sugar is dissolved. Then add cucumber, red onion and pepper. Serve in a small cup on a side.
Cooking tips:
Remember to wait until the oil is hot first before to drop pork bread to fry or the bread will soak up with oil from the pan.

Thai Food Recipe: Zucchini Stir Fry (Phad Buab)

Prepare:
1 cup zucchini (Peel off the skin and cut)

1/2 cup shrimps (peel, de-veined and soft boiled) you can also use pork or chicken
1 egg
2 tbsp. crushed garlic
2 tbsp. oyster sauce
1 tbsp. soy sauce
1 tsp. sugar
1 tbsp. fish sauce
1 tbsp. vegetable oil
Cooking Instructions:
1. Heat the pan. Add vegetable oil and use medium heat.
2. When the pan is hot, add garlic. Stir fry until it has aromatic smell.
3. Add sliced pork or chicken in this step if you choose to cook it with meat. Cook for 5-8 minutes. If you cut the piece thick, you may have to cook it longer. Usually I slice the piece thin and will take just 5 minutes to be done.
4. Next, add zucchini. Juice from zucchini will come out definitely.
5. Add fish sauce. I always add fish sauce first because it will give a unique smell that can increase people appetite
especially, for Thai people.
6. Add some small amount of water.
7. Add sugar, soy sauce and oyster sauce. Stir fry for 3 minutes
8. Now, use spatula to move every on the side. Add egg and stir it with spatula.
9. Wait for 10 seconds then mix everything together. Add soft boiled shrimps at this step if you choose to cook it with shrimps.
10. Turn off fire and remove from the pan.

Thai Food Recipe: Spicy Catfish Stirfry with Galingale
ผัดเผ็ดปลาดุก Phad Phed Pla Dook (Spicy Cat Fish Stir fry with Galingale)
Prepare:
500g. cat fish (cut and clean, mix with 1 tsp. salt and deep fried)
1 handful sliced galingale (in long shape)
5 kaffir lime leaves
1 handful young pepper corn
1/2 cup fried basil (wait until the oil is very hot first, then throw the basil in)
1 cup cut eggplant and soak in salted water (help the surface it not to become dark)
2 tbsp. instant chili paste
1 tbsp. sliced chili pepper
2 tbsp. sugar
3 tbsp. fish sauce
2 tbsp. Vegetable oil
1 tbsp. kaffir lime skin
1 tsp. minced galangal
1 tbsp. lemongrass
1 tbsp. sliced red onion
1 tbsp. minced garlic
Cooking Instructions:
1. Ground kaffir lime skin, galangal, lemongrass, red onion and garlic. After that, mix it with instant chili paste.
2. Next, heat the pan and add vegetable oil. Wait until the oil is hot then add chili paste from step 1.
3. When the chili paste has aromatic smell, add eggplants. If you like it medium cooked, then stir fry for 2 minutes. If you like it completely cook, you should stir fry it for 8 minutes.
4. Now, add some small amount of water, fish sauce and sugar.
5. Add fresh galingale, kaffir lime leave, crunchy cat fish, and chili peppers. Mix well.
6. Turn off the fire. Dress fried basil on top and serve with hot jasmine rice.
Food tips:
When you fry the cat fish, use max heat to heat up the oil first then lower it to medium. Slowly drop the fish into the hot oil and wait until the other is done. When it’s crunchy, you can flip it over. Don’t rush it, just take time and use medium heat.
