The seaweed used in this soup is known widely as 'Sea Lettuce' and is sold as 'Wakame' in Japanese food stores. It comes dried and should be rehydrated before being added to the soup.
When I had this in a Thai restaurant, it was served without the pork balls and had an especially delicate & refreshing taste - perhaps because of that fact?

Good question! We're not much into seaweed here as you might be. Our bag says "Dried Seaweed". Unfortunately that's all we have to go on. But, this is the same seaweed that is frequently dried and pressed into sheets of green or black seaweed. I'm eating some right now since Joy pulled it out and I didn't know we had any! These are not pressed in sheets. Excellent taste... :) (Vern replying - Joy is working on stuff for her other job on her computer.)
